ALTYDGEDACHT SEMILLON NOBLE LATE HARVEST 2011

Vineyard
Altydgedacht is a 412 hectare estate, that has been in the Parker family since 1852. Brothers John and Oliver and their teams utilizes the Durbanville microclimate to its fullest to produce wines with distinctive varietal expression. Dry land vineyards with Hutton soils and trellised hedges.

Vinification
The grapes were hand-picked in the cool morning hours at a minimum of 35.3°Balling on 18 April 2011. The crushed fruit was allowed to soak overnight in press, in the presence of a high concentration pectolytic enzyme (to improve juice recovery) and white wine tannin (to prevent oxidation and browning of the juice). The grapes were pressed the following morning, with the slow press cycle lasting half a day. The juice was subsequently flash-pasteurised to inhibit the browning effect of the laccase enqyme. The juice was filtered for clarification prior to fermentation - conventional settling has been proven ineffective in the production of NLH.

Yeast strain WE372 was used for its sensitivity to low fermentation temperatures - prerequisite if the fermentation in a wine needs to be stopped. After 3 weeks, the fermentation was stopped for optimum balance between sweetness, acidity and alcohol.

Tasting notes
2011 was the maiden vintage of Altydgedacht Semillon Noble Late Harvest. The nose of the wine is characterized by aromas of dried apricots, honey and a hint of spice. The palate is rich and velvety sweet, with sufficient acidity to give structure to the wine. A dessert wine which is the ideal partner to crème brullé. Available in 375ml bottles.
